20-Minute Weeknight Dal Tadka Recipe

This recipe focuses on speed and flavour, making it perfect for those busy evenings!

Ingredients You’ll Need (All Available at IndoKiwi Grocery!):

  • 1 cup IndoKiwi Toor Dal (or a mix of Toor and Masoor Dal for quicker cooking)
  • 3 cups water
  • 1/2 tsp IndoKiwi Turmeric Powder
  • Salt to taste

For the Tadka (Tempering):

  • 2 tbsp IndoKiwi Pure Desi Ghee (or cooking oil)
  • 1 tsp IndoKiwi Cumin Seeds
  • 1/2 tsp IndoKiwi Mustard Seeds
  • 1 small onion, finely chopped
  • 2-3 cloves garlic, minced
  • 1 inch ginger, grated or minced
  • 1-2 green chillies, slit (adjust to your spice preference)
  • 1 medium tomato, finely chopped
  • A pinch of Asafoetida (Hing) – available in our spice section!
  • 1/2 tsp Red Chilli Powder (optional, for extra heat and colour)
  • Fresh coriander leaves, chopped, for garnish

Instructions:

1. Cook the Dal (Pressure Cooker Method for Speed!):

  • Rinse the IndoKiwi Toor Dal thoroughly under running water until the water runs clear.
  • In a pressure cooker, combine the rinsed dal, 3 cups of water, IndoKiwi Turmeric Powder, and a pinch of salt.
  • Close the lid and cook on high heat for 3-4 whistles. Let the pressure release naturally (this usually takes 5-7 minutes). If you don’t have a pressure cooker, you can boil the dal in a pot, which will take 20-25 minutes until soft.
  • Once cooked, the dal should be soft and mushy. Gently mash it with the back of a spoon if needed to get a creamy consistency.

2. Prepare the Tadka (The Flavour Bomb!):

  • While the dal is cooking, heat IndoKiwi Pure Desi Ghee (or oil) in a small pan or a tadka pan over medium heat.
  • Once the ghee is hot, add IndoKiwi Cumin Seeds and IndoKiwi Mustard Seeds. Let them splutter.
  • Add the finely chopped onion and sauté until it turns light golden brown (about 3-4 minutes).
  • Stir in the minced garlic, grated ginger, and slit green chillies. Sauté for another minute until fragrant.
  • Add the pinch of Asafoetida (Hing) and Red Chilli Powder (if using), and quickly mix.
  • Finally, add the chopped tomato. Cook until the tomatoes soften and the ghee starts to separate from the mixture (about 3-4 minutes).

3. Combine and Serve:

  • Pour the prepared tadka directly over the cooked dal in the pressure cooker or serving bowl.
  • Stir gently to combine the tadka with the dal. Check for salt and adjust if necessary.
  • Garnish generously with fresh chopped coriander leaves.
